1. Preheat the oven to 400 F. Lightly oil 12-cup muffin pan with olive oil or line with paper liners.
2. Mash bananas in a medium bowl.
3. Add 2 Eggs, Vanilla extract, melted butter
4. In a separate medium bowl add all dry ingredients: flour, ground flax seeds, baking powder, baking soda, salt.
5. Stir the wet ingredients into the dry ones. Add chopped strawberries and mix.
6. Divide the batter into the muffin cups. Bake for 20 minutes until golden.
7. Cool the pan on a wire rack for 5 minutes.
