This classic recipe is always a hit during cold time of the year. It is nourishing, healing and full of flavor. It’s perfect for sweater weather and very comforting. This recipe has two steps: making a chicken broth and using it as a base for different soup recipes. 1. Combine chicken, vegetables, apple cider and spices in a large stockpot. Pour in enough water to just cover the chicken completely. Heat the water to just under a boil over medium-high heat. Reduce the heat to a very slow simmer, cook for about 1.5 hours for the chicken meat to be cooked completely. 2. Remove the chicken from the pot, cut the chicken meat from the bones and return the bones to the pot and cook for another 1.5 -2 h. 3. Strain the broth into another pot to make a chicken noodle soup or pour into glass jars to be stored in the refrigerator. The broth can be refrigerated for up to 5 days and to be used as a base in different recipes. I hope you enjoy this simple and nourishing broth!
