These easy to make strawberry banana muffins are perfect for breakfast or a healthy snack. Flax seeds are fabulous little seeds that have intestinal-friendly fibers, boost immune system with their phenolic acid and flavonoids, promote heart health with their alpha-linolenic acid, that have been shown to lower cholesterol. Flax seeds also contributes to colon health and help to stabilize blood sugar. I like to grind flaxseeds in a coffee grinder or a spice grinder just before I use them in the recipes to preserve the nutrients, or you can use packaged ground flax seeds as well. Enjoy!
- 1/2 Cup Ground Flax seeds
- 2 Cups Chopped strawberries
- 2 Medium Bananas
- 1 1/2 Cup Whole wheat flour Or Gluten Free Flour
- 1/3 Cup Melted grass fed butter Or Olive oil
- 1 Teaspoon Baking powder
- 1/2 Teaspoon Baking soda
- 2 Medium Eggs
- 1 Teaspoon Vanilla extract
- 1/2 Teaspoon Sea salt
- 1/2 Cup Maple Syrup Or Coconut Sugar
- 1. Preheat the oven to 400 F. Lightly oil 12-cup muffin pan with olive oil or line with paper liners. 2. Mash bananas in a medium bowl. 3. Add 2 Eggs, Vanilla extract, melted butter 4. In a separate medium bowl add all dry ingredients: flour, ground flax seeds, baking powder, baking soda, salt. 5. Stir the wet ingredients into the dry ones. Add chopped strawberries and mix. 6. Divide the batter into the muffin cups. Bake for 20 minutes until golden. 7. Cool the pan on a wire rack for 5 minutes. Enjoy!
